Hydrogenation is the process of making the double bonds in mono- and poly-unsaturated fats into single bonds by saturating them with hydrogen gas. This makes them last longer, and turns them solid or semi-solid at room temperature.

Bottom line: The TRANS FATS created by the hydrogenation process are about the worst thing you can put into your body.
