You’ll Never Believe This Crave-able Rice Bowl Has Less Than 500 Calories

There are the foods that you can't stop thinking about because they're so delicious—and then there are the ones that can help you lose weight. When those two circles inersect, though, is where the real magic happens. This portobello, squash, and wild rice bowl from Michael Stebner, the director of culinary innovation at Sweetgreen, a delicious up-and-coming salad chain, definitely falls smack dab in the middle of that zone. It's got just 455 calories per bowl, and the umami flavor from the miso paste, tamari, and mushrooms has been proven to help you feel more full—and resist the urge to overeat later. But don't take our word for it—try this super satisfying dish for yourself.

Sweetgreen Portobello, Squash, and Wild Rice Bowl
Makes 6-8 servings

2 cups cooked wild rice, warm
4 cups kale leaves, shredded
1 handful basil leaves, torn
3 Portobello mushrooms, stemmed, diced, and roasted*
1 small butternut squash, peeled, diced, and roasted*
1 small red onion, peeled, diced, and roasted*
1 medium red beet, peeled and diced

Combine all of the salad ingredients in a large mixing bowl, and toss with your preferred amount of dressing (recipe below).  Serve immediately.

*Season the mushrooms, diced squash, and onions with two to three tablespoons of extra-virgin olive oil, along with a teaspoon of kosher salt and six to seven turns of black pepper from a pepper mill. Spread all of the ingredients out on two baking trays in a single layer.  Place under the broiler until everything starts to caramelize, about 10 minutes, then stir everything up and continue to broil until all sides are well caramelized, about 20 minutes total.  Taste, and adjust for seasoning.  This mixture can be used hot.

Ginger Miso Dressing

2 Tbsp sweet white miso paste
2 Tbsp tamari or soy sauce
1 Tbsp sriracha (optional)
2 Tbsp rice vinegar
½ tsp sesame oil
¼ cup warm water
2 Tbsp mirin
1 thumb-sized piece of ginger, peeled and minced
1 garlic clove, smashed and minced
½ cup grape seed oil

Combine all ingredients except grape seed oil in a blender on low until smooth. Increase speed to medium while adding grape seed oil. Taste this, and make adjustments to your own taste.
