ULTIMATE FAUX JUNK WHEAT BREAD BUNS

TODDSTER63'S ULTIMATE FAUX JUNK WHEAT BREAD BUNS
3 eggs, separated
Dash cream of tartar
3 ounces cream cheese, softened
1/4 cup unflavored whey protein
1 tablespoon golden flax meal
1/4 teaspoon xanthan gum
2 pinches granular Splenda
Pinch salt
1 tablespoon sesame seeds, optional

In a medium metal or glass bowl, beat the egg whites and cream of tartar until stiff peaks form. Set aside.

In a large bowl with an electric mixer, beat the egg yolks, cream cheese, whey, flax meal, xanthan gum, sweetener and salt until smooth. Add about 1/2 cup of the egg whites and stir in until well blended. Add the remaining egg whites and very gently fold in until somewhat combined being careful not to deflate the batter. It's fine if there are some bits of egg white showing.

Gently spoon the batter onto a parchment-lined baking sheet or a well-greased muffin top pan, making six buns. Sprinkle the tops with sesame seeds, if desired. Bake at 300?for 35 minutes until well browned but don't let them burn on the bottoms. Cool on the pan. Use at once or store in the refrigerator.

Makes 6 sandwich bun halves or 3 servings

Per Serving (2 buns): 210 Calories; 17g Fat; 13g Protein; 3g Carbohydrate; .5g Dietary Fiber; 2.5g Net Carbs

This recipe was posted on Low Carb Friends by Toddster63, HERE, and I finally got around to trying it. I've tried a few different variations of the classic Atkins Revolution Rolls and this was the very first one where the buns didn't collapse as they cooled. They kept their shape perfectly. Next time I make them I might smooth out the batter a little so they don't come out quite as bumpy. My muffin top pan has a tendency to stick so I took the precaution of lining it with squares of well-greased foil. I pressed the foil into the forms to shape it. Although the buns did stick to the foil in a few spots, it was very easy to peel it off. I didn't actually measure out the sesame seeds. I just sprinkled a few on each bun. A tablespoon of sesame seeds only adds 1 net carb to the whole batch and I probably didn't use quite that many. Click the photos to see close-ups.
