Dehydrating Ground Beef

I have dehydrated grass fed ground beef to make Pemmican. This is my first time to try to make Pemmican. I didn't precook the beef, I left all the fat and dried it at 115 in an Excalibur Dehydrator. The beef taste great and dried well.
My question is this: Is it safe? I have read that it needs most of the fat removed to store long term. My mind thinks that Pemmican is a high fat meat that stores well.
Will this ground beef store like other dehydrated beef?
It is a little greasy and I will add tallow to it to make Pemmican.
I want to go Raw as I can, I am a distance athlete (bicycle) and kind of a short term disaster prepper.

Hi,

Well I already answered some of this on rawpaleoforum in my other guise as TylerDurden. Heating at 104 degrees Fahrenheit/40 degrees Celsius would be better. Long-term RVAFers are happy to eat raw, aged meat so would have no issue with raw animal fat. Of course, if you are planning on storing it long-term, perhaps you should remove the fat after all. Especially in view of the fact that non-rawists might find the smell of the aging raw fat offensive.

Tallow is cooked animal fat so hardly healthy. I will admit that pemmican(raw dried beef jerky plus tallow) can be stored unaltered for many years, though. I have come across  one or two RVAFers who eat pemmican while travelling but always eat raw at other times.

All this needs some experimentation on your part. I will admit that I generally just eat raw fresh meat or raw aged meats(generally grassfed or wild/wildcaught).  I have sometimes dried meat at 37 degrees Celsius and have not exactly been fond of chewing fully-dried beef jerky. I did once do an experiment where I  brought along some fully-dried beef jerky and then tried to rehydrate them  but it did not seem to work. On my next mountain-hiking trip, I will try partially-dehydrated meats for the first 2-3 days and just not eat for the remaining 2-3 days.

Hmm, have you considered pickling your raw meats? Then again, this would not be convenient for a bicyclist...

I am no expert on raw dehydration of meats, but it might be a good idea for me to eventually write a book on RVAF diets as a whole as the few current RVAF books often contain misleading info here and there.
