Hi - Thanks for your kind (and quick!) reply.  Just so I understand this correctly: are you saying that even though butter contains cholesteral doesn't necessarily mean that my body will absorb it?  Does this vary from person to person?

I'm a 54 yr old male.  We have a hospice aide caring for my elderly mother.  The aide mentioned that she always uses butter in cooking -'margarine has plastics in it - it's no good.' I notice that the fat difference is not much but that margarine can claim 'no cholesterol.'  Any thoughts on this?

HI Mark,

I'm with her! I use butter when olive oil isn't appropriate, like eggs, crab cakes.... The less man made a food is the better. Content is one thing, what you can absorb can be a whole different story.

Yes, and yes. Got it, varies how much hangs round. Butter adds a little flavor, IN GENERAL not much negative effects. Margarine does nothing right. Olive oil is the only major oil without some bad side effects, sesame oil is okay if you really need to cook something at a higher temp than you can with olive oil (too hot it will smoke).
