eggs & cholesterol

Question
Hi. I have a couple of questions. First, I love scrambled eggs and I would like to eat them everyday, but I am aware of the high cholesterol in them. I've tried all the egg substitutes on the market and they are pretty bad. My question is, is it really that damaging to eat 1 or 2 eggs each day?

My second question is about fiber. Are there any breads that have a high amount of fiber in them? Thanks!

Answer
Danielle,

These days the goal is to keep your daily cholesterol intake to less than 300mg a day (less than 200mg if you have heart disease or diabetes).  It is felt that if you keep your total under 300, then an egg can fit in with your diet.  One large egg has 200-225mg of cholesterol, so two will put you over your daily limit.  Even one egg a day only leaves you with only 75-100mg for the rest of the day.  A single 3 ounce chicken breast has about 75mg of cholesterol (broiled or baked ?no butter).  That can make the rest of your diet that day vegetarian (cholesterol is found only in animal foods).  FYI, all the cholesterol in an egg is in the yolk ?none in the egg white.
Here are a couple of articles from the American Heart Association on eggs:

The final answer may have to be determined when you check your cholesterol levels after you get into a habit of eating so many eggs a week.  If your cholesterol levels go up ?too many eggs?

WHOLE grain breads should have more fiber than white breads.  What you will need to do is walk down the bread isle and read food labels.  Fiber is listed right there on each loaf.  Remember, wheat breads are still made from flour (processed grains) and don't necessarily have more fiber.

I hope this helps and best wishes.
