Fussy Eater.


Question
My boyfriend can be very fussy when it comes to food. He has no problem at all with meat and junk food.. but ijust about the only vegetable he will eat is lettuce. I feel funny serving him a salad as it is really just a bowl of lettuce. I try to make things with lots of vegies in it like stir frys but he just picks out the meat to eat and wont eat anything else. Although he seems quite healthy, I'm worried he isnt getting the vitamins and nutrients that he needs especially because he has had a few heart problems in the past.. He is quite a big guy- very tall- 6'10" but is still quite skinny. Is there anything I can do to make sure that he makes up what he needs in other ways- or any suggestions as to what to cook to hide the taste of vegetables.

   Thank you for your nutrition question.  There are many inventive  strategies for sneaking nutrition into your boyfriends diet.  How about preparing pancakes that contain a mashed banana or blueberries.  Here are a few more:
  One great way to get more fruit in his diet is preparing a fruit smoothie with berries, strawberries, peaches, yogurt, and orange juice.  Just take a 1/2 cup of each and blend along with a cup of ice.  Berries are powerful antioxidants.
   If he refuses plain steamed vegetables, present these foods in 'hidden' ways, such as in casseroles or soups.   Chicken lemon rice soup is a wonderful healthy soup which contain carrots, celery, onions, rice, lemon juice and chicken broth. You can also prepare a healthy tastey tomato soup by blending whole tomatoes in a blender with a small amout of garlic, basil, and adding some cooked rice. Serve this with garlic bread.
