Hi Jerry
I have found different lists of alkaline and acid forming foods on the internet.  What is the effect of cooking food on its acid or alkalizing effect on the body?  For example, most vegetables falls under alkaline forming foods - does cooking it make any difference, and what forms of cooking has least effect?

Answer
To the best of my knowledge, cooking doesn't change the acid/alkali forming aspect of foods.  However, it does typically destroy the enzymes and drain the vitamin/mineral content.  Raw foods are best and steaming is the least detrimental form of food preparation.  More information on the effects of cooking can be found at my website - www.jerryryanphd.com.  Download my dissertation under the Free Articles section.
