Hit a wall?!

OK, so I hear a lot of different advice about this from different people but thought Id ask you because nothing has solved my problem. I'll try to make this short.
I work out 7 days a week but I'd say 2 of those days I'll just walk uphill and I wont do weight training either. I do weight training about 4-5 days a week, for about 30-40 minutes, sometimes light, sometimes heavy. I do Spin 5 days a week, and try to change it up with running and doing light spin/aerobic verses anaerobic. I eat every 2 hours, I don't eat a lot of junk food, I have IBS so I mainly eat healthy and fresh. Chicken, oatmeal, eggs, fruit, salads etc. I have protein shakes and supplements. I get enough sleep and water and dont let myself go hungry.
So heres my problem. I see very little change in my body, I see tone but it is slow. I leave the gym now feeling like I did not work out at all. Lately my body feels like its giving up. I cant do as much weight as I use to and Im tired and feel like my cardio workout is too hard, but still feel like I don't burn any calories.
What am I doing wrong? People told me Im overtrained. That my heart/body is use to extreme workout loads (I USE to run 6 miles a day 7 days a week) and I need to lower it. Now they tell me I don't eat enough calories and fat.
I use to do sports, this is what I love and I can't just not work out. When I don't work out, I don't feel like I should eat every 2 hours either, but Im use to eating.

You are over doing. You put your system into some state of shock, which lowers your metabolism.

You can't use much protein, out with the protein shakes, pure junk.

Heavy weight lifting once a week, as muscles are formed on the down time.
