dried, powder, glucose reduced," mean. Does it mean the yellow part of the
egg or just the white part of the egg? Or both?

This product is a powdered egg white that is used in large-scale food production such as a prison or a hospital. It is reconstituted with water before it is cooked. It may also be used in a product like "egg beaters" which is a low cholesterol egg substitute.
