carb content of rice and pasta

Question
Hello,

I have noticed on packets of food that the amount of carbs in dry pasta or rice is different to the amount when it is cooked. I was wondering if you could tell me why this is and why the amount of carbs seems to decrease when the food is cooked.

Thanks,
Alice

Answer
Hi Alice...

You typically see this change on items that are cooked in water. This is because the difference is simply that 1 cup of cooked noodles has water in it while uncooked does not. So on a per volume basis, (ie 1 cup) carb count goes down. The actual nutritional content of the food does not change (at any amount to be concerned with).
