Nutrients in cooked versus dry food

Hello,

I have noticed on packets of food that the amount of carbs in pasta and rice is different when the food is dry and when it is cooked. Please could you explain why this is and why the amount of carbs seems to decrease when the food is cooked.

It's simply because the density of all nutrients is lower in cooked foods due to the increased volume caused by added water. You might be interested in more general information on how nutrient content changes depending on conditions, for example:
