The profound changes our clients experience are due to increasing their intake of raw fruits and veggies to 75% of their daily food and eliminating dead, chemical laden food completely.

Give it a try! This is a 75% raw meal:
· Large salad consisting of 2 handfuls of organic greens (spinach, spring mix, romaine)
· Shredded carrots, purple cabbage and chopped cucumbers on your salad with a vinaigrette dressing
· 15 raw soaked almonds or 2 Tbs raw sunflower or pumpkin seeds
OR
· ½ cup cooked, organic beans such as black beans or garbanzo beans
· 3-minute salad (recipe below)

When you eat like this you don’t have to count calories! In his book, Eat To Live, Dr. Joel Fuhrman, MD reports you would have to fill your tummy with veggies one and a half times to eat 400 calories of raw veggies.

3-Minute Salad – takes less than 3 minutes to make & will keep up to 3 days in refrigerator
· 1 12-oz package of precut organic veggies from the produce section of your supermarket (broccoli, carrots, cauliflower, snow peas, etc.)
· 1 bottle of organic vinaigrette salad dressing (your favorite flavor – mine is an Italian garlic)
Add approximately ½ cup of the dressing to the veggies, stir well, cover and refrigerate. The veggies will become softened and flavored as they marinate in the dressing.

**Super 3-minute Salad
1. Use in-season veggies that are fresh from the farmer’s market. This is early in the season so you could possibly find Vidalia onions, broccoli, and snap peas, possibly some cucumbers.
2. Make Sula’s dressing instead of a purchased dressing

Sula’s Dressing (a sweet dressing)
Use for 3-minute Salad

· 4 T flaxseed oil
· ¼ c lemon juice or Bragg’s apple cider vinegar
· 3 Tbs Raw honey or Raw Agave Nectar
· 1 Tbs minced garlic or ½ tsp garlic powder
· 1 Tbs minced onion or ½ tsp dry onion flakes

Mix well, pour over a mixture of your favorite chopped veggies and marinate for at least 1 hour. Serve over lettuce or cooked sprouted Quinoa as a cold grain salad instead of a pasta salad. Recipe is from Hallelujah! Simple Weekly Meal Plans by Marilyn Polk, www.hacres.com
